Cucumber Pineapple Smoothie

This cucumber pineapple smoothie is tart-sweet, creamy, and refreshing. It’s one of my favorite green smoothie combinations – not too sweet, not too thick and super hydrating.


  1. Blend. Add the cucumber, pineapple, banana, spinach, lemon juice, and coconut milk into a high-speed blender and blend on high until completely smooth.

  2. Serve immediately.

  3. Store. Leftover smoothie keeps well in an airtight container in the refrigerator for up to 1 day, though best when fresh. For longer term storage, freeze in an airtight container for up to 1 month.


1/2 English cucumber, sliced
1 cup frozen pineapple cubes
1/2 banana
1 handful spinach

1 Tbsp. flax
1 Tbsp. lemon juice
1 cup coconut milk
